PUEBLA

The city of Puebla, formally Puebla de los Ángeles, is the seat of the Municipality of Puebla, the capital and largest city of the state of Puebla, and one of the five most important Spanish colonial cities in Mexico.

The city was founded in 1531 in an area called Cuetlaxcoapan, which means "where serpents change their skin", in between of two of the main indigenous settlements at the time, Tlaxcala and Cholula. This valley was not populated in the 16th century as in the pre-Hispanic period; this area was primarily used to the "flower wars" between a number of populations.

Being both the fourth largest city in Mexico and the fourth largest Metropolitan area in Mexico, the city serves as one of the main hubs for eastern Central Mexico. Many students come from all over the country. The city is also important because of its industry, with one of the world's largest Volkswagen factories outside of Germany located in the Municipality of Cuautlancingo. As a result, many suppliers have opened factories in the city of Puebla.

May 5 Battle.

The Battle of Puebla took place on 5 May 1862 near the city of Puebla during the French intervention in Mexico. The battle ended in a victory for the Mexican Army over the occupying French forces. The French eventually overran the Mexicans in subsequent battles, but the Mexican victory at Puebla against a much better equipped and larger French army provided a significant morale boost to the Mexican army and also helped slow the French army's advance towards Mexico City.

Each year commemorates the battle of May 5, and holding a civic military parade, which traditionally culminating in the forts of Loreto and Guadalupe.

Puebla's Gastronomy.

Puebla's cuisine is varied, we find chalupas, cemitas (which can be filled with Milaneza, ham, enchilada beef or pig's feet) and the popular Arabic taco, with influences from Middle Eastern cuisine. The list could go with green or red pipián, Puebla cream, molotes, pambazos, quesadillas, tamales, tlacoyos, tostadas, mole de olla, memelas, enchiladas, poblano rajas, jerky, mixtotes,huauzontles and Escamoles.
But we only focus on four delicious and tasty dishes of this great city: the cemitas, Arab tacos, peppers in walnut sauce, and the mole. 

 The Cemitas.  

The cemita is a sandwich originally from Puebla, Mexico. The name can refer to the bread roll it is served on as well.

The cemita, also known as cemita poblana, derives from the city (and region) of Puebla. The word refers to the sandwich as well as to the roll it is typically served on, a bread roll covered with sesame seeds. The bread is made with egg, and resembles brioche. Additionally, the ingredients usually are restricted to sliced avocado, meat, white cheese, onions, the herb pápalo and red sauce (salsa roja). In modern times it has appeared on the streets of New York, Los Angeles, and other cities with Mexican food vendors.

The most popular meat in a cemita is beef milanesa, a thinly pounded and deep-fried piece of beef. Cueritos (pickled pig skin), queso de puerco (pork head cheese), and carnitas (stewed pork) are also popular. The cheese is often panela, a bland white cheese with the consistency of fresh mozzarella. Quesillo, a Mexican string cheese, is also used.

Arab Tacos.

Called tacos árabes, which originated in Puebla in the 1930s from Lebanese-Mexican cuisine. Tacos árabes use shawarma-style meat carved from a spit, but are served in a pita bread called pan arabe. These tacos have been brought by Mexican immigrants to the United States in the past few years and have become popular in cities like Chicago and Los Angeles, two of the largest Mexican and Mexican-American population centers in the United States
The Arab taco originated in the city of Puebla in the thirties, when Mr. Jorge Tabe from Iraq, comes to this city, started a Taco meat cooked cakes and Arabic style business.

Chiles en nogada is a dish from Mexican cuisine. The name comes from the Spanish word for the walnut tree, nogal. It consists of poblano chiles filled with picadillo (a mixture usually containing shredded meat, aromatics, fruits and spices) topped with a walnut-based cream sauce, called nogada, and pomegranate seeds, giving it the three colors of the Mexican flag: green for the chili, white for the nut sauce and red for the pomegranate. The walnut used to prepare nogada is a variety called Nogal de Castilla or Castillan Walnut, also known as the English Walnut.

The traditional chile en nogada is from Puebla; it is tied to the independence of this country since it is said they were prepared for the first time to entertain the emperor Agustín de Iturbide when he came to the city after his naming as Agustín I. This dish is a source of pride for the inhabitants of the state of Puebla.

Some Mexican historians believe the inventors of this dish were the Monjas Clarisas, although others think they were the Madres Contemplativas Agustinas of the convent of Santa Monica, Puebla.

The picadillo usually contains panochera apple (manzana panochera), sweet-milk pear (pera de leche) and criollo peach (durazno criollo). The cream usually has milk, double cream, fresh cheese and washed nuts. The traditional season for making and eating this dish is August and first half of September, when pomegranates appear in the markets of Central Mexico and the national independence festivities begin. In some areas, the dish is created depending on when the pomegranates are ripe - usually between early October and January.

JUAREZ PARK

AQUATIC PARK SAN LORENZO

How to get to Tehuacan? 


Two options to get out from the city of Puebla :

CUETZALAN

Cuetzalan is a small town set high in the hills in the north of the Mexican state of Puebla, 183 kilometers from Puebla, the state capital. It is located in the Sierra Norte region. The town itself is characterized by sloping cobbled streets and numerous rustic buildings. It serves as the municipal seat for the surrounding municipality of Cuetzalan del Progreso.

Cuetzalan was named a "Pueblo Mágico" in 2002.

The town center is composed largely of handicraft markets as well as numerous stalls selling every-day necessities. As a tourist attraction, the town also has a few bars, restaurants and nightclubs. Getting to Cuetzalán from Puebla takes around four hours. The best route is by getting a coach from central bus depot in Puebla.
